Black Bean Soup = one of my favorites.
You don't need much:
 teeny bit of olive oil, half a large onion, two cloves of garlic, a celery stalk, half a zuchini, a small squash, small box of veggie stock, two cans of black beans, one can of diced tomatoes & green chiles, cilantro, & can't forget the brown rice, of course. 
( I find a way to incorporate rice into any meal)
Thensautee all sliced & diced veggies, onion, & garlic in olive oil in a deep sauce pan. Then add everything that's remaining. Add a little salt & pepper to taste. Stir & simmer for as long as you can wait, then garnish with fresh cilantro. For more goodness, add brown rice to your bowls & serve with natural corn chips.
