And another that's so very delicious & Daniel Fast friendly.
Chunky Potato Soup
1 TB extra-virgin olive oil, 1/2 cup chopped onions, 1 cup chopped carrots, 1 cup sliced celery, 2 cloves garlic, minced, 4 Vegetable Broth , 5ish medium Red potatoes (with skins) , 1 tsp salt , 1/8 tsp pepper , 1/2 cup soy milk, 2 TB chopped fresh parsley or 1 tsp dried parsley
Sautee onions,carrots, & celery in olive oil until softened.Then stir in garlic. Add broth, potatoes, salt, & pepper. Bring to a boil. Simmer covered for 30 minutes. Take half the soup mixture and blend in processor or blender, then return to your pot. Stir in soymilk & parsley, & serve with warm Ezekiel bread. I know, not really carb balanced- just the way I like it.
